Preserving Figs
l. Dry Pack:
Pack washed and well drained figs into plastic freezer bags, filling all the space.
Seal, label and freeze.
2. Sugar Pack:
Leave washed figs whole or cut in half. Toss one cup of sugar with five (5) cups of sliced or cut-up figs in a freezer bag. Seal , label and freeze.
3. Syrup Pack:
Mix one cup granulated sugar and two cups water in a saucepan. Bring to a boil, cool to room temperature and add scant one-half teaspoon ascorbic acid mixture (such as Fruit Fresh) or one-quarter cup lemon juice. Pack washed figs in freezer containers and pour syrup to cover.
